I am neither Camargue nor Breton, even if my name, of Béarnese origin, is confusing. I am a young distiller, in love with my adopted land, who chose a great teacher, Jamie Baxter, to learn another trade. A trade close to the world of essential oils, distillers, and perfumers, where I have spent the last 15 years of my professional life.
Thomas Bigourdan, enthusiastic distiller.

Enthusiastic distiller and British know-how
Thomas is the creator of Bigourdan - Distillerie de Camargue. Jamie is a distiller, and English. And his passion is building micro-distilleries. Thomas chose him to help him build Distillerie de Camargue and write the recipe for the most Mediterranean of London Drys.

Roellinger Wild Plants and Spices
Juniper, of course - it is essential to the production of a gin - but also immortelle, lavender, thyme, verbena, fennel, coriander, angelica roots, lemon... Behind each plant, each herb, there is the first name of a local producer, a florist-gardener, the smells of wild pickings in Provence, Corsica, Occitania and also the art and manner of choosing Olivier Roellinger's spices.
