My Arlesian pastis is a climate, it has the traits of the impulsive, heady, burning character of the Camargue, this tiny Provençal territory often threatened, always defended tooth and nail by those who lovingly inhabit it.

If I were a table Pastis
I would like him to accompany us to the table, he would play arm wrestling with the summer wine or at his side. And who knows, win the game like in other countries where the carafe of anisette and fresh water are placed next to the mezzes, salads, grilled meats from one end of the meal to the other.
