The development
Fennel, verbena, sage, savory, thyme, mugwort, tarragon. These seven botanicals are macerated separately and then blended with the Original Gin botanical distillate, star anise, and licorice.
The Pastis Bigourdan is then lightly sweetened with a honey syrup from the Alpilles.
Maixent Dubois, picker, grower of aromatic plants and producer of Pastis Garagai, passed on his fundamentals to Thomas.
